Weights are approximate. Every pack is cut and weighed by hand.
Butcher-cut and hand-trimmed from full-blood Wagyu raised in South Louisiana. Serve one steak for two, sliced thin, the way Wagyu is meant to be eaten.
How to cook it
Thaw overnight in the fridge, then let it sit out 30 minutes. Salt well. Sear in a ripping-hot cast-iron pan 2 to 3 minutes a side and pull at 125 to 130°F for medium-rare. Rest 5 minutes. Wagyu fat melts at a lower temperature than regular beef, so keep it at medium or below.

How to cook Wagyu
Full-blood Wagyu fat melts at a lower temperature than regular beef, so cook a little gentler and a little less done. Thaw overnight in the fridge. Steaks: hard sear, pull at 125 to 130°F. Sausage and burgers: cook to 160°F. Every product description has its own steps, and our full cooking guide covers every cut.
